- Begin by preparing the apples. Wash and dry the apples thoroughly. Slice them into wedges or rings, removing the core. Set aside.
- In a food processor, combine the pitted medjool dates, almond butter (or peanut butter), vanilla extract, and sea salt. Blend until you achieve a smooth and creamy texture. If the mixture is too thick, you can add a teaspoon of water to help blend it more easily.
- Once the caramel mixture is ready, dip each apple slice into the caramel, making sure to coat it evenly. Allow any excess caramel to drip off.
- If desired, roll the caramel-coated apple slices in the unsweetened shredded coconut or chopped nuts for added texture and flavor.
- Place the coated apple slices on a parchment-lined baking sheet or plate. You can enjoy them immediately or refrigerate for about 30 minutes to let the caramel firm up slightly.
