- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine the drained whole kernel corn, creamed corn, pancake mix, milk, honey, eggs, melted butter, pecans (if using), vanilla extract, and cinnamon.
- Whisk all ingredients together until well combined.
- Pour the batter into the prepared baking dish.
- Bake for 30-35 minutes, or until the casserole is set and lightly golden brown.
- Let cool slightly before serving.
Notes
For a richer flavor, use brown butter instead of regular melted butter. You can also add other mix-ins like shredded cheese or chopped jalapeños for a spicier kick. Leftovers can be stored in the refrigerator for up to 3 days.
