  • 1 cup Buttermilk Pancake Mix
  • 1/2 cup Milk
  • 1/4 cup Honey
  • 2 Eggs large
  • 1/4 cup Melted Unsalted Butter
  • 1/4 cup Chopped Pecans or Walnuts optional
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Ground Cinnamon

Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the drained whole kernel corn, creamed corn, pancake mix, milk, honey, eggs, melted butter, pecans (if using), vanilla extract, and cinnamon.
  3. Whisk all ingredients together until well combined.
  4. Pour the batter into the prepared baking dish.
  5. Bake for 30-35 minutes, or until the casserole is set and lightly golden brown.
  6. Let cool slightly before serving.

Notes

For a richer flavor, use brown butter instead of regular melted butter. You can also add other mix-ins like shredded cheese or chopped jalapeños for a spicier kick. Leftovers can be stored in the refrigerator for up to 3 days.
