- In a large bowl, combine the olive oil, smoked paprika, lemon zest, lemon juice, minced garlic, salt, and pepper. Mix well to create a marinade.
- Add the shrimp to the marinade, ensuring each shrimp is well coated. Cover the bowl and let it marinate in the refrigerator for 30 minutes to 1 hour.
- Preheat your grill to medium-high heat.
- Once the grill is hot, thread the marinated shrimp onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.
- Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Remove the skewers from the grill and let them rest for a few minutes.
- Garnish with fresh parsley before serving.
