- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until combined.
- Fold in the lemon zest and lemon juice gently until evenly distributed in the batter.
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and allow to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
- While the loaf cools, prepare the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
- Once the loaf is completely cooled, drizzle the glaze over the top, allowing it to drip down the sides.
- Let the glaze set for a few minutes before slicing and serving.
Notes
For a richer flavor, you can add poppy seeds to the batter or serve with fresh berries.
