  • 1 pound Fettuccine pasta
  • 2 tablespoons Olive oil
  • 4 cloves Garlic minced
  • 1/2 teaspoon Red pepper flakes optional
  • 1 28-ounce can Crushed tomatoes
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black pepper freshly ground, or to taste
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup Fresh basil chopped, for garnish (optional)

Method
 

Instructions
  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook for about 1 minute, or until fragrant, being careful not to burn the garlic.
  3. Pour in crushed tomatoes, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
  4. Add the cooked pasta to the tomato sauce and toss to coat. If the sauce is too thick, add a little pasta water at a time until you reach your desired consistency.
  5. Stir in half of the Parmesan cheese.
  6. Serve immediately, topped with remaining Parmesan cheese and fresh basil (if using).

Notes

For a vegetarian option, omit the Parmesan cheese and use nutritional yeast for a cheesy flavor. Feel free to add other vegetables like spinach or mushrooms to the sauce.
