Instructions
- Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook for about 1 minute, or until fragrant, being careful not to burn the garlic.
- Pour in crushed tomatoes, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
- Add the cooked pasta to the tomato sauce and toss to coat. If the sauce is too thick, add a little pasta water at a time until you reach your desired consistency.
- Stir in half of the Parmesan cheese.
- Serve immediately, topped with remaining Parmesan cheese and fresh basil (if using).
Notes
For a vegetarian option, omit the Parmesan cheese and use nutritional yeast for a cheesy flavor. Feel free to add other vegetables like spinach or mushrooms to the sauce.
