  • 1 pound Mini Sweet Peppers
  • 3 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika
  • 1 tablespoon Fresh Parsley, chopped for garnish

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the mini sweet peppers under cool water and pat them dry with a towel.
  3. Slice each mini pepper in half lengthwise and remove the seeds.
  4. In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and smoked paprika. Stir until well combined.
  5. Add the halved mini peppers to the bowl and toss them in the garlic oil mixture until they are evenly coated.
  6. Arrange the coated mini peppers in a single layer on a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 20-25 minutes, or until the peppers are tender and slightly caramelized.
  8. Remove from the oven and let cool for a few minutes.
  9. Transfer the roasted mini peppers to a serving platter and sprinkle with fresh parsley for garnish.
  10. Serve warm as a delicious appetizer or side dish.
