- Preheat your oven to 400°F (200°C).
- Rinse the mini sweet peppers under cool water and pat them dry with a towel.
- Slice each mini pepper in half lengthwise and remove the seeds.
- In a large mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and smoked paprika. Stir until well combined.
- Add the halved mini peppers to the bowl and toss them in the garlic oil mixture until they are evenly coated.
- Arrange the coated mini peppers in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the peppers are tender and slightly caramelized.
- Remove from the oven and let cool for a few minutes.
- Transfer the roasted mini peppers to a serving platter and sprinkle with fresh parsley for garnish.
- Serve warm as a delicious appetizer or side dish.
