  1. Prepare the Steaks: Take the New York strip steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.
  2. Make the Spice Mixture: In a small bowl, combine the smoked paprika, chopped rosemary, minced garlic, salt, and pepper. Mix well to create a paste.
  3. Season the Steaks: Rub the spice mixture generously over both sides of each steak, ensuring an even coating. Let the steaks rest for an additional 10 minutes to absorb the flavors.
  4. Heat the Skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  5. Cook the Steaks: Carefully place the seasoned steaks in the hot skillet. Cook for 4-5 minutes on one side without moving them to achieve a nice crust. Flip the steaks and cook for an additional 3-4 minutes for medium-rare doneness, or to your desired level of doneness.
  6. Prepare the Garlic Butter: While the steaks are cooking, melt the butter in a small saucepan over low heat. Once melted, add the minced garlic and cook for about 1-2 minutes, stirring frequently until the garlic is fragrant and slightly golden. Remove from heat.
  7. Baste the Steaks: During the last minute of cooking, spoon the garlic butter over the steaks to baste them, enhancing the flavor.
  8. Rest the Steaks: Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes. This helps the juices redistribute.
  9. Serve: Slice the steaks against the grain and drizzle with the remaining garlic butter. Serve immediately.

Notes

For an extra kick, add a pinch of cayenne pepper to the spice mixture.
