  • 2 Ripe mangoes Peeled, pitted, and diced
  • 1 Small red onion Finely chopped
  • 1 Red bell pepper Diced
  • 1 Jalapeño Seeded and minced
  • 1/4 cup Fresh cilantro Chopped
  • 2 Limes Juiced
  • to taste Salt

Method
 

Instructions
  1. In a medium bowl, combine the diced mangoes, red onion, red bell pepper, and jalapeño.
  2. Add the chopped cilantro and lime juice to the bowl.
  3. Gently toss all the ingredients together until well mixed.
  4. Season with salt to taste, adjusting as necessary.
  5. Let the salsa sit for at least 15 minutes to allow the flavors to meld.
  6. Serve with tortilla chips, grilled meats, or as a topping for tacos.

Notes

Feel free to adjust the spice level by adding more or less jalapeño. This salsa is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
