Equipment

  • Microwave-safe bowl
  • 8x8 inch baking pan
  • Parchment Paper

Method

Instructions
  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large microwave-safe bowl, combine the chocolate chips, sweetened condensed milk, pumpkin puree, pumpkin pie spice, cinnamon, and nutmeg.
  3. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and the mixture is smooth (about 2-3 minutes).
  4. Stir in the chopped pecans or walnuts, if using.
  5. Pour the mixture into the prepared baking pan and spread evenly with a spatula.
  6. Refrigerate for at least 2 hours, or until firm.
  7. Lift the fudge out of the pan using the parchment paper overhang, cut into squares, and serve.

Notes

For a richer flavor, use dark chocolate chips. You can also add a pinch of salt to enhance the sweetness. Store leftover fudge in an airtight container in the refrigerator for up to a week.
