  • 1.5 cups All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 cup (1 stick) Unsalted butter, chilled cut into cubes
  • 0.25 cup Packed light brown sugar
  • 0.25 cup Ice water
Filling Ingredients
  • 1 cup Packed light brown sugar
  • 0.5 cup Granulated sugar
  • 0.5 cup Light corn syrup
  • 0.25 cup Unsalted butter, melted
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 1.5 cups Pecan halves

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Whisk together flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the brown sugar. Gradually add ice water, mixing until the dough just comes together. Do not overmix.
  4. Press the dough evenly into the bottom of the prepared pan.
  5. In a large bowl, whisk together brown sugar, granulated sugar, corn syrup, melted butter, eggs, and vanilla extract until well combined.
  6. Stir in the pecan halves. Pour the pecan filling evenly over the crust.
  7. Bake for 30-35 minutes, or until the filling is set and the crust is lightly golden brown.
  8. Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars and serve.

Notes

For a richer flavor, toast the pecans before adding them to the filling. Store leftover bars in an airtight container at room temperature for up to 3 days.
