Making the Chocolate Dip
- Step 1: Prepare the Base Ingredients. Ensure that both the cream cheese and the butter are fully softened to room temperature. This is essential for achieving a smooth, lump-free dip. Sift the cocoa powder and powdered sugar into separate bowls to prevent clumps later in the process.
- Step 2: Cream the Fats. Place the completely softened cream cheese and the softened butter into the bowl of a large stand mixer (fitted with the paddle attachment) or use a handheld electric mixer. Beat the cream cheese and butter together on medium speed for two to three minutes until the mixture is light, fluffy, and well combined, scraping down the sides of the bowl midway through the process.
- Step 3: Integrate Dry Ingredients Gradually. Reduce the mixer speed to low. Slowly begin adding the sifted powdered sugar, about one half cup at a time, allowing each addition to be fully incorporated before adding the next. This slow incorporation prevents a cloud of sugar dust. Stop the mixer and scrape down the sides of the bowl thoroughly once all the powdered sugar has been added.
- Step 4: Add the Cocoa and Flavoring. Still mixing on low speed, gradually add the sifted cocoa powder and the small pinch of salt, if using. Once the cocoa powder is incorporated and the mixture turns a deep brown, increase the mixer speed back to medium and beat for one minute until the chocolate is fully blended and there are no streaks of white. Add the two teaspoons of vanilla extract and mix until just combined.
- Step 5: Adjust Consistency. If the dip appears too thick or stiff, gradually pour in the heavy cream or milk, one tablespoon at a time, mixing on low speed until you reach your desired creamy consistency. For a lighter, airier dip, increase the mixer speed to medium-high and whip for an additional one to two minutes until the dip is noticeably lightened in texture.
- Step 6: Chill and Serve. Transfer the finished Chocolate Cream Cheese Fruit Dip into an airtight container. Refrigerate the dip for at least two hours before serving. Chilling allows the flavors to meld together and the dip to firm up slightly. When ready to serve, transfer the dip to a decorative bowl and surround it with fresh fruit, such as grapes, pineapple chunks, sliced kiwi, or berries.
Notes
The dip can be prepared up to three days in advance and stored covered in the refrigerator. If the dip is too stiff after chilling, let it sit out at room temperature for 10-15 minutes before serving, or add a splash more cream and whip gently.
