  • 2.5-3 pounds Lamb shoulder, bone-in
  • 1 cup Pecans, finely crushed
  • 2 tablespoons Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder

  • 2 tablespoons Olive oil
  • 2 Large onions, thinly sliced
  • 3 cups Beef or lamb stock
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 tablespoon Balsamic vinegar

Method
 

Instructions
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the crushed pecans, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well to create the crust mixture.
  3. Pat the lamb shoulder dry with paper towels. Rub the olive oil all over the lamb.
  4. Press the pecan and paprika mixture firmly onto the surface of the lamb shoulder, ensuring it adheres well.
  5. In a large oven-safe pot or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Sear the lamb shoulder on all sides until browned, about 4-5 minutes per side. Remove the lamb from the pot and set aside.
  6. In the same pot, add the sliced onions and cook over medium heat, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  7. Once the onions are caramelized, add the beef or lamb stock, Worcestershire sauce, rosemary, thyme, and balsamic vinegar to the pot. Stir to combine.
  8. Return the lamb shoulder to the pot, spooning some of the onion mixture over the top. Cover the pot with a lid and place it in the preheated oven.
  9. Roast the lamb for about 3 hours, or until the meat is tender and falls off the bone. Check occasionally, and if the liquid level gets too low, add a bit more stock or water.
  10. Once cooked, remove the lamb from the pot and let it rest for 15 minutes before carving.
  11. To serve, slice the lamb shoulder and drizzle with the rich caramelized onion gravy from the pot. Enjoy!
