Crispy Salmon Patties
  • 1 can (14.75 oz) Canned Salmon Drained and flaked
  • 1/2 cup Breadcrumbs
  • 1/4 cup Green Onions Finely chopped
  • 1/4 cup Mayonnaise
  • 1 Egg Beaten
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • for frying Olive Oil
Cheesy Broccoli Rice Casserole
  • 2 cups Cooked Rice
  • 2 cups Broccoli Florets Steamed
  • 1 cup Cheddar Cheese Shredded
  • 1/2 cup Sour Cream
  • 1/2 cup Milk
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • to taste Salt
  • to taste Black Pepper
  • 1/2 cup Breadcrumbs For topping
Soft Scrambled Eggs
  • 6 Large Eggs
  • 1/4 cup Milk
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Butter

Method
 

Instructions
  1. For the Crispy Salmon Patties: In a bowl, combine the flaked salmon, breadcrumbs, green onions, mayonnaise, beaten egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
  2. Form the mixture into patties, about 2-3 inches in diameter.
  3. Heat olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy. Remove from skillet and place on paper towels to drain excess oil.
  4. For the Cheesy Broccoli Rice Casserole: Preheat the oven to 350°F (175°C). In a large bowl, mix together the cooked rice, steamed broccoli, cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  5. Transfer the mixture into a greased baking dish. Sprinkle breadcrumbs evenly over the top.
  6. Bake for 25-30 minutes, or until bubbly and golden on top.
  7. For the Soft Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  8. Melt butter in a non-stick skillet over low heat. Pour the egg mixture into the skillet.
  9. Stir gently with a spatula, pushing the eggs from the edges toward the center. Cook for 3-4 minutes, or until the eggs are softly set but still slightly runny. Remove from heat.

Notes

Feel free to add additional herbs and spices to the salmon patties for extra flavor.
