- For the Crispy Salmon Patties: In a bowl, combine the flaked salmon, breadcrumbs, green onions, mayonnaise, beaten egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
- Form the mixture into patties, about 2-3 inches in diameter.
- Heat olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy. Remove from skillet and place on paper towels to drain excess oil.
- For the Cheesy Broccoli Rice Casserole: Preheat the oven to 350°F (175°C). In a large bowl, mix together the cooked rice, steamed broccoli, cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture into a greased baking dish. Sprinkle breadcrumbs evenly over the top.
- Bake for 25-30 minutes, or until bubbly and golden on top.
- For the Soft Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Melt butter in a non-stick skillet over low heat. Pour the egg mixture into the skillet.
- Stir gently with a spatula, pushing the eggs from the edges toward the center. Cook for 3-4 minutes, or until the eggs are softly set but still slightly runny. Remove from heat.
