- Start by cutting the cod fillets into bite-sized pieces and pat them dry with paper towels.
- In a shallow bowl, combine the flour, paprika, garlic powder, salt, and black pepper.
- In a separate bowl, place the beaten eggs.
- In a third bowl, add the panko breadcrumbs.
- Dredge each piece of cod in the seasoned flour, shaking off any excess.
- Dip the floured cod into the beaten eggs, allowing any excess to drip off.
- Finally, coat the cod pieces with panko breadcrumbs, pressing gently to adhere.
- In a large skillet, heat about ½ inch of vegetable oil over medium-high heat until shimmering.
- Carefully add the breaded cod pieces to the hot oil in a single layer. Fry in batches if necessary to avoid overcrowding.
- Cook for 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the cooked cod bites to a paper towel-lined plate to drain excess oil.
- In a small bowl, whisk together the honey, sriracha sauce, soy sauce, rice vinegar, and minced garlic until well combined.
- Serve the crispy garlic cod bites hot with the honey sriracha sauce drizzled on top or on the side for dipping.
Notes
For extra crunch, you can add some crushed cornflakes to the panko breadcrumbs. Adjust the sriracha sauce to your preferred spice level.
