- Coat the Cod: Dredge each piece of cod in the flour mixture, shaking off any excess. Dip the floured cod into the beaten eggs, ensuring it's fully coated. Finally, roll the cod in the breadcrumb mixture, pressing gently to adhere.
- Fry the Cod Bites: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. To check if the oil is hot enough, drop a small piece of bread into the oil; if it sizzles, it's ready. Carefully add the coated cod pieces to the hot oil in batches, avoiding overcrowding the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the cooked cod bites to a paper towel-lined plate to drain excess oil.
- Make the Creamy Lemon Herb Dip: In a bowl, combine the mayonnaise, sour cream, lemon juice, lemon zest, chopped parsley, and chopped dill. Mix until smooth. Season with salt and pepper to taste.
- Serve: Serve the crispy garlic cod bites hot with the creamy lemon herb dip on the side and lemon wedges for squeezing.
