  • 1 cup All-purpose flour
  • 2 Large eggs, beaten
  • 1 cup Breadcrumbs
  • 4 cloves Garlic, minced
  • 1 tsp Paprika
  • 1 tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Cayenne pepper (optional for heat)
  • ½ cup Grated Parmesan cheese
  • as needed Vegetable oil for frying Approximately 1 inch in the skillet

Creamy Lemon Herb Dip
  • ½ cup Mayonnaise
  • ½ cup Sour cream
  • 1 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 1 tbsp Fresh parsley, chopped
  • 1 tbsp Fresh dill, chopped
  • Salt and pepper to taste

  1. Prepare the Cod Bites: Pat the cod pieces dry with paper towels. In a shallow bowl, combine the flour, paprika, salt, black pepper, and cayenne pepper. In another bowl, place the beaten eggs. In a third bowl, combine the breadcrumbs, minced garlic, and grated Parmesan cheese.
  2. Coat the Cod: Dredge each piece of cod in the flour mixture, shaking off any excess. Dip the floured cod into the beaten eggs, ensuring it's fully coated. Finally, roll the cod in the breadcrumb mixture, pressing gently to adhere.
  3. Fry the Cod Bites: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. To check if the oil is hot enough, drop a small piece of bread into the oil; if it sizzles, it's ready. Carefully add the coated cod pieces to the hot oil in batches, avoiding overcrowding the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the cooked cod bites to a paper towel-lined plate to drain excess oil.
  4. Make the Creamy Lemon Herb Dip: In a bowl, combine the mayonnaise, sour cream, lemon juice, lemon zest, chopped parsley, and chopped dill. Mix until smooth. Season with salt and pepper to taste.
  5. Serve: Serve the crispy garlic cod bites hot with the creamy lemon herb dip on the side and lemon wedges for squeezing.

Notes

For extra flavor, you can add more herbs to the dip or try using panko breadcrumbs for an even crispier texture.
