- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the chopped sun-dried tomatoes and sauté for 2-3 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
- Add the fresh spinach to the sauce and cook until wilted, about 2 minutes.
- Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional minute to heat through.
- Taste and adjust seasoning with additional salt and pepper as needed.
- Serve hot, garnished with fresh basil if desired.
Notes
