  • 1 pound Shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Sun-dried tomatoes, chopped
  • 1 cup Fresh spinach
  • 1 cup Heavy cream
  • ½ cup Grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil for garnish (optional)

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the chopped sun-dried tomatoes and sauté for 2-3 minutes.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
  5. Add the fresh spinach to the sauce and cook until wilted, about 2 minutes.
  6. Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional minute to heat through.
  7. Taste and adjust seasoning with additional salt and pepper as needed.
  8. Serve hot, garnished with fresh basil if desired.

Notes
