- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sun-dried tomatoes and stir for about 1 minute.
- Pour in the heavy cream, stirring to combine. Allow the mixture to simmer for a couple of minutes.
- Slowly whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
- Season the sauce with Italian seasoning, salt, and pepper to taste.
- Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
- Return the cooked shrimp to the skillet and toss to coat them in the creamy sauce. Cook for an additional 1-2 minutes to heat through.
- Serve the creamy Tuscan shrimp over pasta, rice, or with crusty bread. Garnish with fresh basil if desired.
