  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 cup Sun-dried tomatoes, chopped (packed in oil)
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 cups Fresh spinach
  • Fresh basil, for garnish (optional)

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the sun-dried tomatoes and stir for about 1 minute.
  4. Pour in the heavy cream, stirring to combine. Allow the mixture to simmer for a couple of minutes.
  5. Slowly whisk in the grated Parmesan cheese until the sauce is smooth and creamy.
  6. Season the sauce with Italian seasoning, salt, and pepper to taste.
  7. Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
  8. Return the cooked shrimp to the skillet and toss to coat them in the creamy sauce. Cook for an additional 1-2 minutes to heat through.
  9. Serve the creamy Tuscan shrimp over pasta, rice, or with crusty bread. Garnish with fresh basil if desired.
