- In a large skillet, heat the olive oil over medium heat. Season the shrimp with salt, pepper, and Italian seasoning.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Stir in the fresh spinach and chopped sun-dried tomatoes. Cook for 2-3 minutes until the spinach wilts.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly. Season with additional salt and pepper to taste.
- Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Let everything simmer together for an additional 2-3 minutes to heat through.
- Garnish with fresh basil if desired and serve immediately over pasta, rice, or with crusty bread.
Notes
For a lighter version, you can substitute the heavy cream with Greek yogurt or a light cream alternative.
