  • 1 lb Large shrimp, peeled and deveined
  • 2 cups Fresh spinach
  • 1/2 cup Sun-dried tomatoes, chopped
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 3 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Olive oil
  • Salt and pepper, to taste
  • Fresh basil for garnish (optional)

Method
 

Instructions
  1. In a large skillet, heat the olive oil over medium heat. Season the shrimp with salt, pepper, and Italian seasoning.
  2. Add the shrimp to the skillet and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Stir in the fresh spinach and chopped sun-dried tomatoes. Cook for 2-3 minutes until the spinach wilts.
  5. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and the sauce thickens slightly. Season with additional salt and pepper to taste.
  6. Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Let everything simmer together for an additional 2-3 minutes to heat through.
  7. Garnish with fresh basil if desired and serve immediately over pasta, rice, or with crusty bread.

Notes

For a lighter version, you can substitute the heavy cream with Greek yogurt or a light cream alternative.
