- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Steam or boil green beans until tender-crisp, about 5-7 minutes. Drain well and set aside.
- In a large saucepan, melt butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk until smooth.
- Bring the mixture to a simmer, stirring constantly, until it thickens. Reduce heat to low and stir in salt, pepper, and nutmeg.
- Layer half of the potatoes, then half of the green beans in the prepared baking dish. Pour half of the cheese sauce over the vegetables. Repeat layers.
- Sprinkle bread crumbs evenly over the top. Bake for 30-40 minutes, or until potatoes are tender and the top is golden brown and bubbly.
- Let stand for 10 minutes before serving.
Notes
For a richer flavor, use heavy cream instead of some of the milk. You can also add other vegetables like carrots or peas. Consider topping with crispy fried onions for extra texture.
