  • 1 pound Fettuccine pasta
  • 6 tablespoons Butter
  • 8 cloves Garlic minced
  • 1/2 cup Heavy cream
  • 1 cup Parmesan cheese grated
  • 1/4 cup Fresh parsley chopped, optional
  • to taste Salt
  • to taste Black pepper freshly ground

  • Large skillet

Method
 

Instructions
  1. Cook pasta according to package directions in a large pot of salted boiling water until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, melt butter in a large skillet over medium heat.
  3. Add minced garlic to the melted butter and cook for 1 minute, or until fragrant. Do not burn the garlic.
  4. Pour in heavy cream and bring to a simmer. Reduce heat to low.
  5. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  6. Add drained pasta to the skillet and toss to coat evenly. Add reserved pasta water if sauce is too thick.
  7. Garnish with fresh parsley (if using) and serve immediately.

Notes

For a richer flavor, use a combination of Parmesan and Romano cheese. You can also add cooked chicken, shrimp, or vegetables to make it a complete meal.
