  • 16 ounces Extra Sharp Cheddar Cheese shredded
  • 8 ounces Cream Cheese softened
  • 4 ounces Pimentos jar, drained and chopped
  • 0.25 cup Mayonnaise
  • 2 tablespoons Buttermilk (or milk)
  • 1 teaspoon Yellow Mustard
  • 1 teaspoon Garlic Powder
  • 0.25 teaspoon Onion Powder
  • 0.25 teaspoon Cayenne Pepper optional
  • to taste Salt and Pepper freshly ground

Method
 

Instructions
  1. In a medium bowl, combine the shredded cheddar cheese and softened cream cheese. Mix until evenly combined.
  2. Add the drained and chopped pimentos, mayonnaise, buttermilk (or milk), yellow mustard, garlic powder, onion powder, and cayenne pepper (if using).
  3. Gently mix all ingredients until thoroughly combined and creamy. Avoid overmixing.
  4. Season with salt and freshly ground black pepper to taste. Start with a small amount and add more as needed.
  5. Taste and adjust seasonings as desired.
  6. Refrigerate for at least 30 minutes to allow the flavors to meld. (Optional, but recommended)
  7. Serve chilled with crackers, bread, vegetables, or as a sandwich spread.

Notes

For a smoother pimento cheese, you can briefly pulse the mixture in a food processor. Add a tablespoon of chopped jalapeƱos for extra spice. Consider adding a pinch of paprika for a deeper flavor.
