- Beat the softened cream cheese with an electric mixer until completely smooth and creamy. This ensures a melt-in-your-mouth texture.
- Gradually add the powdered sugar, beating on low speed until fully incorporated. Be careful not to overmix.
- Stir in the vanilla and peppermint extracts. Add green food coloring if desired, mixing until the color is even.
- Taste the mixture and add more peppermint extract if needed to reach your desired intensity.
- Roll the mixture into small balls (about 1 inch in diameter) or use a spoon to drop small mounds onto wax paper.
- If rolling into balls, roll them in crushed candy canes for a festive look.
- Refrigerate the mints for at least 30 minutes, or until they are firm.
