  • 1 teaspoon Vanilla Extract
  • 1/2 - 1 teaspoon Peppermint Extract to taste
  • few drops Green Food Coloring optional
  • 1/2 cup Crushed Candy Canes optional, for rolling

Method
 

Instructions
  1. Beat the softened cream cheese with an electric mixer until completely smooth and creamy. This ensures a melt-in-your-mouth texture.
  2. Gradually add the powdered sugar, beating on low speed until fully incorporated. Be careful not to overmix.
  3. Stir in the vanilla and peppermint extracts. Add green food coloring if desired, mixing until the color is even.
  4. Taste the mixture and add more peppermint extract if needed to reach your desired intensity.
  5. Roll the mixture into small balls (about 1 inch in diameter) or use a spoon to drop small mounds onto wax paper.
  6. If rolling into balls, roll them in crushed candy canes for a festive look.
  7. Refrigerate the mints for at least 30 minutes, or until they are firm.
  8. Serve chilled and enjoy!

Notes

Store leftover mints in an airtight container in the refrigerator for up to a week. For a richer peppermint flavor, use peppermint extract and finely crushed candy canes.
