- Prepare the Allspice: In a dry skillet over medium heat, toast the whole allspice berries until fragrant, about 2-3 minutes. Remove from heat and let cool slightly. Using a mortar and pestle or a spice grinder, crack the allspice berries into coarse pieces.
- Caramelize the Shallots: In the same skillet, add 2 tablespoons of butter over medium-low heat. Add the sliced shallots and a pinch of salt. Cook, stirring occasionally, until the shallots are golden brown and caramelized, about 15-20 minutes. Remove from heat and set aside.
- Prepare the Garlic Confit Butter: In a small saucepan, melt 2 tablespoons of butter over low heat. Add the minced garlic and simmer gently for about 10 minutes, until the garlic is soft and fragrant. Remove from heat and set aside.
- Season the Steaks: Pat the New York strip steaks dry with paper towels. Season both sides generously with salt, freshly ground black pepper, and the cracked allspice.
- Cook the Steaks: Heat a grill pan or cast-iron skillet over high heat until very hot. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let the steaks rest for 5 minutes.
- Assemble the Dish: On a serving plate, place the rested steaks. Top each steak with a generous spoonful of the caramelized shallots and drizzle the browned garlic confit butter over the top. Garnish with fresh thyme leaves if desired.
