  • 1/2 Red onion finely chopped
  • 1 Jalapeño seeded and minced (optional for heat)
  • 1/4 cup Fresh cilantro chopped
  • 2 limes Lime juice
  • 1/4 cup Olive oil
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper

Instructions
  1. In a large mixing bowl, combine the black beans, black-eyed peas, and corn. Stir gently to mix.
  2. Add the cherry tomatoes, diced bell pepper, red onion, jalapeño, and chopped cilantro to the bowl. Mix well.
  3. In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.
  4. Pour the dressing over the bean and vegetable mixture. Toss everything gently to ensure the dressing coats all the ingredients evenly.
  5. Taste and adjust seasoning with more salt, pepper, or lime juice if desired.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled or at room temperature with tortilla chips or as a side dish.

Notes

This dish can be customized with additional ingredients like avocado or served with various types of chips.
