- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until smooth and creamy.
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Roll the dough into 1-inch balls. Place them about 2 inches apart on the prepared baking sheets.
- Use a fork to create a criss-cross pattern on top of each cookie.
- Bake for 8-10 minutes, or until the edges are lightly golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, add 1/2 cup of chocolate chips to the dough. Store cookies in an airtight container at room temperature for up to a week.
