- In a food processor, combine the pitted Medjool dates, rolled oats, cocoa powder, shredded coconut, almond butter, vanilla extract, and sea salt.
- Pulse the mixture until it is well blended and forms a sticky dough. If the mixture is too dry, add a teaspoon of water or additional almond butter.
- If using, add chia seeds and dark chocolate chips to the mixture and pulse a few more times to combine.
- Using your hands, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm up.
- Store the energy balls in an airtight container in the refrigerator for up to one week.
Notes
Feel free to substitute with other nut butters or add your favorite mix-ins like dried fruit or nuts.
