  • 1 cup Medjool dates, pitted
  • 1 cup Rolled oats
  • 1/2 cup Unsweetened cocoa powder
  • 1/2 cup Shredded unsweetened coconut
  • 1/2 cup Almond butter (or any nut butter)
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Sea salt
  • 1/4 cup Chia seeds (optional) Adds extra nutrition and fiber.
  • 1/4 cup Dark chocolate chips (optional)

Method
 

Instructions
  1. In a food processor, combine the pitted Medjool dates, rolled oats, cocoa powder, shredded coconut, almond butter, vanilla extract, and sea salt.
  2. Pulse the mixture until it is well blended and forms a sticky dough. If the mixture is too dry, add a teaspoon of water or additional almond butter.
  3. If using, add chia seeds and dark chocolate chips to the mixture and pulse a few more times to combine.
  4. Using your hands, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm up.
  7. Store the energy balls in an airtight container in the refrigerator for up to one week.

Notes

Feel free to substitute with other nut butters or add your favorite mix-ins like dried fruit or nuts.
