Ingredients

Ingredients
  • 2 Large Oranges
  • 4 cups Water
  • 2 cups Granulated Sugar
  • 1 cup Light Corn Syrup
  • 1 teaspoon Vanilla Extract
  • 1 pound Semisweet Chocolate chopped
  • 1 pinch Salt Optional, to enhance the sweetness

Equipment

  • Large saucepan
  • Sharp Knife
  • Slotted spoon
  • Wire Rack
  • Double Boiler or Microwave-Safe Bowl

Method

Instructions
  1. Wash oranges thoroughly and slice into 1/8-inch thick rounds. Remove seeds.
  2. Bring 4 cups of water to a boil. Blanch orange slices for 3 minutes to reduce bitterness. Remove and set aside.
  3. In the same saucepan, combine sugar, corn syrup, 1 cup water, and a pinch of salt (optional). Stir over medium heat until sugar dissolves. Bring to a boil, stirring occasionally.
  4. Add blanched orange slices to the boiling syrup. Reduce heat and simmer for 20-25 minutes, turning occasionally, until translucent and tender.
  5. Remove slices and place on a wire rack to cool and drain completely (several hours).
  6. Melt chocolate in a double boiler or microwave. Stir until smooth.
  7. Dip each dry orange slice into melted chocolate, ensuring full coverage. Place back on the wire rack to set.
  8. Allow chocolate to set completely at room temperature before serving or storing in an airtight container.

Notes

For a richer flavor, use dark chocolate. You can also add a pinch of cinnamon or nutmeg to the syrup for extra warmth.
