Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, chopped onion, minced garlic, smoked paprika, chipotle powder, salt, and black pepper. Mix until well combined.
- Stir in the shredded cheddar cheese, chopped bacon, barbecue sauce, and fresh parsley until evenly distributed.
- On a sheet of parchment paper or a lightly greased surface, form the meat mixture into a rectangle about 1/2 inch thick.
- In the center of the meat rectangle, sprinkle an additional layer of shredded cheddar cheese and crumbled bacon.
- Carefully roll the meatloaf from one end to the other, encasing the cheese and bacon filling inside. Pinch the ends to seal the meatloaf.
- Place the rolled meatloaf seam-side down in a baking dish or on a lined baking sheet.
- Spread the remaining barbecue sauce over the top of the meatloaf.
- Sprinkle the top with shredded cheddar cheese and crumbled bacon.
- Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and let it rest for about 10 minutes before slicing.
- Serve warm, garnished with additional parsley if desired.
Notes
For a spicier meatloaf, add more chipotle powder or serve with additional pepper sauce.
