- In a large pot, combine the chicken or vegetable broth and water. Bring to a boil over medium-high heat.
- Once boiling, add the sliced onions, minced garlic, and minced ginger. Reduce the heat and let it simmer for about 5 minutes until the onions become translucent.
- Add the sliced mushrooms, julienned carrots, and chopped bok choy to the pot. Stir well and cook for an additional 5-7 minutes until the vegetables are tender.
- While the vegetables are cooking, prepare the noodles according to package instructions in a separate pot. Drain and set aside.
- After the vegetables are tender, stir in the soy sauce, sesame oil, and chili paste (if using). Taste and season with salt and pepper as needed.
- To serve, place a portion of the cooked noodles in a bowl. Ladle the hot soup and vegetables over the noodles.
- Garnish with chopped green onions and fresh cilantro before enjoying your delicious Chinese noodle soup!
