Ingredients

  • 4 cups Chicken or vegetable broth
  • 2 cups Water
  • 200 g Noodles (egg noodles or rice noodles)
  • 1 cup Sliced mushrooms (shiitake or button mushrooms)
  • 1 cup Bok choy, chopped
  • 1 cup Carrots, julienned
  • 1 Small onion, sliced
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Chili paste (optional)
  • to taste Green onions, chopped (for garnish)
  • to taste Fresh cilantro (for garnish)
  • Salt and pepper to taste

Method
 

Instructions
  1. In a large pot, combine the chicken or vegetable broth and water. Bring to a boil over medium-high heat.
  2. Once boiling, add the sliced onions, minced garlic, and minced ginger. Reduce the heat and let it simmer for about 5 minutes until the onions become translucent.
  3. Add the sliced mushrooms, julienned carrots, and chopped bok choy to the pot. Stir well and cook for an additional 5-7 minutes until the vegetables are tender.
  4. While the vegetables are cooking, prepare the noodles according to package instructions in a separate pot. Drain and set aside.
  5. After the vegetables are tender, stir in the soy sauce, sesame oil, and chili paste (if using). Taste and season with salt and pepper as needed.
  6. To serve, place a portion of the cooked noodles in a bowl. Ladle the hot soup and vegetables over the noodles.
  7. Garnish with chopped green onions and fresh cilantro before enjoying your delicious Chinese noodle soup!

Notes

Feel free to add your favorite proteins like chicken or tofu for a heartier soup.
