- Preheat your grill or a grill pan over medium-high heat.
- In a small bowl, combine the cracked cumin seeds, olive oil, salt, and black pepper to create a marinade. Rub this mixture all over the filet mignon steaks.
- Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or adjust to your preferred doneness. Remove from heat and let rest for 5 minutes.
- While the steaks are resting, add the scallions to the grill. Cook for 2-3 minutes until charred and tender. Remove from the grill and set aside.
- In a medium bowl, mix the roasted bone marrow, softened butter, minced garlic, chopped parsley, lemon zest, and lemon juice until well combined.
- Slice the rested filet mignon and serve topped with charred scallions and a generous dollop of the roasted bone marrow compound butter.
- Enjoy your flavorful steak with your choice of sides.
