  • 1 tablespoon Cracked Cumin Seeds
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper
  • 6 Scallions trimmed
  • 4 tablespoons Roasted Bone Marrow scooped from the bone
  • 4 tablespoons Unsalted Butter softened
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh Parsley chopped
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Lemon Juice

Method
 

Instructions
  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a small bowl, combine the cracked cumin seeds, olive oil, salt, and black pepper to create a marinade. Rub this mixture all over the filet mignon steaks.
  3. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or adjust to your preferred doneness. Remove from heat and let rest for 5 minutes.
  4. While the steaks are resting, add the scallions to the grill. Cook for 2-3 minutes until charred and tender. Remove from the grill and set aside.
  5. In a medium bowl, mix the roasted bone marrow, softened butter, minced garlic, chopped parsley, lemon zest, and lemon juice until well combined.
  6. Slice the rested filet mignon and serve topped with charred scallions and a generous dollop of the roasted bone marrow compound butter.
  7. Enjoy your flavorful steak with your choice of sides.
