  • 2 steaks New York strip steaks about 1 inch thick
  • 2 tablespoons Cracked black pepper
  • 3 tablespoons Olive oil divided
  • to taste Salt
  • 2 Leeks trimmed and sliced lengthwise
  • 1/2 cup Unsalted butter softened
  • 2 tablespoons Fresh parsley chopped
  • 1 tablespoon Fresh chives chopped
  • 1 teaspoon Smoked paprika
  • to taste Black pepper

Method
 

Instructions
  1. Prepare the Smoked Herb Butter: In a bowl, combine the softened butter, parsley, chives, smoked paprika, salt, and pepper. Mix until well combined. Place the mixture on a piece of parchment paper or plastic wrap. Roll into a log shape and refrigerate until firm, about 30 minutes.
  2. Char the Leeks: Preheat a grill or grill pan over medium-high heat. Toss the sliced leeks with 1 tablespoon of olive oil and season with salt. Place the leeks cut-side down on the grill and cook for about 3-4 minutes, until charred and tender. Flip and grill for another 2 minutes. Remove from heat and set aside.
  3. Prepare the Steaks: Pat the New York strip steaks dry with paper towels. Season both sides generously with salt and press the cracked black pepper into the steak to adhere. In a large skillet or on the grill, heat 2 tablespoons of olive oil over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from the heat and let rest for 5 minutes.
  4. Serve: Slice the steaks against the grain and plate alongside the charred leeks. Top each steak with a pat of the smoked herb butter before serving.

Notes

For a twist, you can add a splash of lemon juice to the herb butter before serving.
