  • 1 pound Large shrimp, peeled and deveined
  • 2 tablespoons Caribbean jerk seasoning
  • 1 tablespoon Olive oil
  • 1 Ripe mango, diced
  • 1 Red bell pepper, diced
  • 1/4 cup Red onion, finely chopped
  • 1 Lime, juiced
  • 1/4 cup Fresh cilantro, chopped
  • to taste Salt and pepper

Method
 

Instructions
  1. In a bowl, combine the shrimp with the Caribbean jerk seasoning and olive oil. Toss until the shrimp are evenly coated. Let marinate for 15-30 minutes to absorb the flavors.
  2. While the shrimp is marinating, prepare the mango salsa. In a separate bowl, mix the diced mango, red bell pepper, red onion, lime juice, and cilantro. Season with salt and pepper to taste. Set aside.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Once hot, add the marinated shrimp to the grill. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  5. Remove the shrimp from the grill and let them rest for a minute.
  6. Serve the grilled shrimp with a generous spoonful of fresh mango salsa on top.

Notes

For a spicier kick, add sliced jalapeƱos to the mango salsa.
