- In a bowl, combine the shrimp with the Caribbean jerk seasoning and olive oil. Toss until the shrimp are evenly coated. Let marinate for 15-30 minutes to absorb the flavors.
- While the shrimp is marinating, prepare the mango salsa. In a separate bowl, mix the diced mango, red bell pepper, red onion, lime juice, and cilantro. Season with salt and pepper to taste. Set aside.
- Preheat a grill or grill pan over medium-high heat.
- Once hot, add the marinated shrimp to the grill. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Remove the shrimp from the grill and let them rest for a minute.
- Serve the grilled shrimp with a generous spoonful of fresh mango salsa on top.
Notes
For a spicier kick, add sliced jalapeƱos to the mango salsa.
