  • 2 large Ripe Tomatoes Sliced about 1/4 inch thick
  • 8 ounces Fresh Mozzarella Sliced about 1/4 inch thick (Buffalo mozzarella recommended)
  • 1/2 cup Fresh Basil Leaves Larger leaves can be halved or quartered
  • 1/4 cup Balsamic Vinegar
  • 1 tablespoon Olive Oil Extra virgin olive oil preferred
  • 1/4 teaspoon Salt Or to taste
  • 1/4 teaspoon Freshly Ground Black Pepper Or to taste
  • 1 tablespoon Optional: Freshly Grated Parmesan Cheese For extra flavor

Instructions
  1. Prepare the balsamic glaze: In a small saucepan, combine the balsamic vinegar and olive oil. Bring to a simmer over medium heat.
  2. Reduce the heat to low and simmer gently for 10-15 minutes, or until the mixture has thickened to a syrupy consistency. Stir occasionally to prevent sticking.
  3. Remove from heat and set aside to cool slightly.
  4. Assemble the salad: Arrange alternating slices of tomato and mozzarella on a serving platter or individual plates.
  5. Tuck fresh basil leaves between the tomato and mozzarella slices.
  6. Drizzle the balsamic glaze evenly over the salad.
  7. Season with salt and freshly ground black pepper to taste. If using, sprinkle with grated Parmesan cheese.
  8. Serve immediately and enjoy!

Notes

For a more robust flavor, marinate the tomato slices in a little olive oil, salt, and pepper for 15-20 minutes before assembling the salad. You can also add other ingredients such as roasted red peppers or olives.
