- Prepare the balsamic glaze: In a small saucepan, combine the balsamic vinegar and olive oil. Bring to a simmer over medium heat.
- Reduce the heat to low and simmer gently for 10-15 minutes, or until the mixture has thickened to a syrupy consistency. Stir occasionally to prevent sticking.
- Remove from heat and set aside to cool slightly.
- Assemble the salad: Arrange alternating slices of tomato and mozzarella on a serving platter or individual plates.
- Tuck fresh basil leaves between the tomato and mozzarella slices.
- Drizzle the balsamic glaze evenly over the salad.
- Season with salt and freshly ground black pepper to taste. If using, sprinkle with grated Parmesan cheese.
- Serve immediately and enjoy!
Notes
For a more robust flavor, marinate the tomato slices in a little olive oil, salt, and pepper for 15-20 minutes before assembling the salad. You can also add other ingredients such as roasted red peppers or olives.
