  • 1 tablespoon Cajun seasoning
  • 1 tablespoon Olive oil
  • 1 cup Sweet corn Fresh, frozen, or canned
  • 1 Ripe avocado, diced
  • 1 tablespoon Lime juice
  • 1/2 cup Sour cream
  • 1 tablespoon Chopped fresh cilantro
  • to taste Salt and pepper
  • Lime wedges For serving

Method
 

Instructions
  1. In a bowl, combine the peeled and deveined shrimp with Cajun seasoning, ensuring the shrimp are evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.
  3. If using fresh corn, cut the kernels off the cob. If using frozen or canned corn, drain and rinse as necessary. In the same skillet, add the corn and sauté for 2-3 minutes until heated through.
  4. In a small bowl, mix together the sour cream, lime juice, and chopped cilantro. Season with salt and pepper to taste.
  5. In serving bowls, layer the cooked corn, diced avocado, and Cajun spiced shrimp. Drizzle the lime crema on top.

Notes
