- Preheat your oven to 400°F (200°C).
- On a baking sheet, place the diced bell peppers and drizzle with 1 tablespoon of olive oil. Season with salt and pepper. Toss to coat evenly.
- Roast the bell peppers in the preheated oven for about 15 minutes or until they are tender and slightly charred. Remove from the oven and set aside.
- In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Sprinkle the Cajun seasoning over the shrimp and toss to coat evenly.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque.
- Stir in the roasted bell peppers, fresh parsley, and thyme. Squeeze the lemon juice over the mixture and toss to combine.
- Cook for an additional minute to heat everything through.
- Serve hot, garnished with additional herbs if desired.
