  • 1 lb Large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 4 tablespoons Unsalted butter
  • 1 Red bell pepper, diced
  • 1 Yellow bell pepper, diced
  • 1 Green bell pepper, diced
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh parsley, chopped
  • 1 tablespoon Fresh thyme, chopped
  • Salt and pepper, to taste
  • 1 Juice of lemon

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, place the diced bell peppers and drizzle with 1 tablespoon of olive oil. Season with salt and pepper. Toss to coat evenly.
  3. Roast the bell peppers in the preheated oven for about 15 minutes or until they are tender and slightly charred. Remove from the oven and set aside.
  4. In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Sprinkle the Cajun seasoning over the shrimp and toss to coat evenly.
  6. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque.
  7. Stir in the roasted bell peppers, fresh parsley, and thyme. Squeeze the lemon juice over the mixture and toss to combine.
  8. Cook for an additional minute to heat everything through.
  9. Serve hot, garnished with additional herbs if desired.

Feel free to adjust the level of Cajun seasoning based on your heat preference. This dish pairs well with rice or crusty bread.
