- Preheat your grill or skillet over medium-high heat.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the pearl onions and sauté until they are caramelized and burnt on the outside, about 8-10 minutes. Season with salt and pepper. Remove from heat and set aside.
- Season the top sirloin steaks generously with salt and black pepper on both sides.
- In a small bowl, combine the key lime juice, key lime zest, and breadcrumbs. Mix until the breadcrumbs are well-coated.
- Press the breadcrumb mixture onto the top of each steak, ensuring an even crust.
- Add the remaining tablespoon of olive oil to the skillet or grill. Cook the steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
- While the steaks are cooking, mix the softened butter with truffle salt in a small bowl until well combined.
- Once the steaks are done, remove them from the heat and let them rest for 5 minutes.
- Serve the steaks topped with burnt pearl onions and a dollop of truffle-salt butter. Garnish with fresh herbs.
