  • 1 cup Pearl onions peeled
  • 2 tablespoons Olive oil

  • 1/2 cup Breadcrumbs
  • 2 tablespoons Unsalted butter softened
  • 1 teaspoon Truffle salt

Method
 

Instructions
  1. Preheat your grill or skillet over medium-high heat.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the pearl onions and sauté until they are caramelized and burnt on the outside, about 8-10 minutes. Season with salt and pepper. Remove from heat and set aside.
  3. Season the top sirloin steaks generously with salt and black pepper on both sides.
  4. In a small bowl, combine the key lime juice, key lime zest, and breadcrumbs. Mix until the breadcrumbs are well-coated.
  5. Press the breadcrumb mixture onto the top of each steak, ensuring an even crust.
  6. Add the remaining tablespoon of olive oil to the skillet or grill. Cook the steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.
  7. While the steaks are cooking, mix the softened butter with truffle salt in a small bowl until well combined.
  8. Once the steaks are done, remove them from the heat and let them rest for 5 minutes.
  9. Serve the steaks topped with burnt pearl onions and a dollop of truffle-salt butter. Garnish with fresh herbs.
