  • 2 lbs Sirloin steak
  • 1 cup Spring onions, trimmed and halved
  • 1 tablespoon Bergamot zest
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Pepper
Miso-Ginger Butter
  • 4 tablespoons Unsalted butter, softened
  • 1 tablespoon White miso paste
  • 1 teaspoon Fresh ginger, grated
  • 1 teaspoon Honey
  • 1 teaspoon Lemon juice

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the bergamot zest, olive oil, salt, and pepper. Rub this mixture all over the sirloin steak.
  3. Heat a large, oven-safe skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side until browned.
  4. Add the halved spring onions to the skillet around the steak, then transfer the skillet to the preheated oven.
  5. Roast in the oven for about 15-20 minutes for medium-rare, or until the desired doneness is reached.
  6. While the steak and onions are roasting, prepare the miso-ginger butter. In a small bowl, combine the softened butter, white miso paste, grated ginger, honey, and lemon juice. Mix well until smooth.
  7. Once the steak is cooked, remove it from the oven and let it rest for about 5-10 minutes.
  8. Slice the steak against the grain and serve with roasted spring onions and a dollop of miso-ginger butter on top.

Notes

For a variation, try adding different herbs to the butter or substitute the spring onions with asparagus.
