- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the bergamot zest, olive oil, salt, and pepper. Rub this mixture all over the sirloin steak.
- Heat a large, oven-safe skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side until browned.
- Add the halved spring onions to the skillet around the steak, then transfer the skillet to the preheated oven.
- Roast in the oven for about 15-20 minutes for medium-rare, or until the desired doneness is reached.
- While the steak and onions are roasting, prepare the miso-ginger butter. In a small bowl, combine the softened butter, white miso paste, grated ginger, honey, and lemon juice. Mix well until smooth.
- Once the steak is cooked, remove it from the oven and let it rest for about 5-10 minutes.
- Slice the steak against the grain and serve with roasted spring onions and a dollop of miso-ginger butter on top.
Notes
For a variation, try adding different herbs to the butter or substitute the spring onions with asparagus.
