  • 2 cups Cooked, shredded chicken
  • 1 cup BBQ sauce
  • 1 bag Tortilla chips
  • 2 cups Shredded cheddar cheese
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn (canned or frozen, thawed)
  • 1 Jalapeño, sliced (optional)
  • 1/2 cup Red onion, diced
  • 1 Avocado, diced
  • 1/4 cup Fresh cilantro, chopped
  • to taste Sour cream (for serving)
  • to taste Lime wedges (for serving)

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken with the BBQ sauce, mixing well until the chicken is fully coated.
  3. On a large baking sheet, spread out the tortilla chips in an even layer.
  4. Evenly distribute the BBQ chicken over the tortilla chips.
  5. Sprinkle the black beans, corn, and diced red onion over the chicken.
  6. Top everything with the shredded cheddar cheese.
  7. Add jalapeño slices on top if you like some heat.
  8. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool slightly.
  10. Top with diced avocado and chopped cilantro before serving.
  11. Serve with a dollop of sour cream and lime wedges on the side.

Feel free to customize your nachos by adding other toppings such as diced tomatoes, olives, or jalapeños!
