- Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- In a large bowl, combine the shrimp, cherry tomatoes, olive oil, garlic powder, Italian herbs, salt, and pepper. Toss everything together until the shrimp and tomatoes are well coated.
- Transfer the shrimp and tomato mixture to the prepared baking dish, spreading it out evenly.
- Sprinkle the grated Parmesan cheese evenly over the shrimp and tomatoes.
- Bake in the preheated oven for 15-20 minutes, or until the shrimp are pink and opaque, and the cheese is melted and slightly golden.
- Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
