- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the peeled and deveined shrimp with the olive oil, minced garlic, oregano, basil, thyme, salt, and pepper. Toss well to coat the shrimp evenly.
- Spread the seasoned shrimp evenly on a baking dish.
- Scatter the halved cherry tomatoes over the shrimp.
- Evenly sprinkle the grated Parmesan cheese over the shrimp and tomatoes.
- Bake in the preheated oven for about 15-20 minutes, or until the shrimp are pink and opaque, and the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly.
- Garnish with freshly chopped parsley before serving.
