- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8-10 minutes.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth. Beat in sour cream, then eggs one at a time. Stir in vanilla and cinnamon.
- Pour the cheesecake filling over the cooled crust.
- Arrange apple slices evenly over the filling.
- Make the crumble topping: Combine flour, brown sugar, cinnamon, and nutmeg. Cut in cold butter until crumbly.
- Sprinkle crumble topping over apples. Bake for 50-60 minutes, or until set around the edges and topping is golden brown.
- Turn off the oven and let cool in the oven with the door slightly ajar for 1 hour. Cool completely before refrigerating for at least 4 hours.
Notes
For a richer flavor, use brown butter in the crust. You can also add a pinch of salt to the crumble topping for balance.
